Peanut Butter Pancakes (Using Egg Replacer)
These peanut butter pancakes are always a hit. They make the perfect breakfast for on a lazy weekend morning, or a breakfast treat on birthdays or other special occasions!
- 1 banana, mashed
- 2 eggs (or egg alternative/ egg replacer)
- 6 tbsp whole oats
- 1 tsp smooth peanut butter
- 1 tsp pumpkin pie spice (1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp nutmeg, 1/8 tsp all spice)
- 30 ml almond milk (or any other milk)
Mix all the ingredients in a bowl to form a thick batter.
Heat up 1 tbsp of oil in a pan.
Pour a little of the batter into the pan and cook you pancakes. You may need to add more oil.
Add any toppings you like. We love using yoghurt, raspberries and goji berries, and cacao nibs are great with them too!
