Cacao

Cacao is the basic material used in the production of chocolate. Cacao nibs are unprocessed cocoa beans which are fermented and dried. To make cacao powder the fat is removed from the nibs and they are ground down to a powder. The minimal processing cacao undergoes helps to maintain its nutritional value with very little being lost or destroyed.

Cacao is rich in antioxidants and has been associated with lower rates of stroke, cardiovascular disease and some cancers. Cacao nibs contain omega-9 which is also found in olive oil and is helpful in maintaining a healthy cholesterol balance. Cacao is also rich in potassium, magnesium and iron.
