Vietnamese Fresh Spring Rolls

These spring rolls make a great lunch or side with dinner, and are a great way to get in some of your five a day.

  • 6 rice paper wrappers
  • 1 avocado
  • 50g mushrooms
  • 50g sprouts
  • 1 chili pepper
  • 2 tomatoes
  • 1 lemon
  • 1 lime
  • 1 mango
  • 1cm ginger
  • coconut flakes
  • peanuts
  • fresh mint
  • fresh coriander

Chop all of the ingredients but the lemon, lime, peanuts and coconut flakes into small pieces and transfer them to a large bowl.

Add the juice of the lemon and line to the ingredients in the bowl and stir.

Soak the rice papers for a few seconds and transfer to a clean plate or cloth.

Add a reasonable amount of filling to the rice paper and roll.

Garnish with extra mint, peanuts and coconut flakes and serve with any sauce of your choice.
