Quinoa Beetroot Veggie Burgers

- 3/4 cup cooked quinoa
- 1/2 large red onion, finely diced
- 1 cup finely chopped mushrooms
- 1 tin black beans, rinsed and drained
- 1 cup raw beetroot, grated
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp paprika
- ~1/2 cup walnuts, ground
Heat a large frying pan over a medium heat with a little oil.
Cook the onions for 4-5 minutes to soften them before adding the mushrooms.
Remove from the heat, add the black beans and roughly mash.
Transfer the mixture to a large mixing bowl.
Add the quinoa, beetroot and spices mix well.
Add the ground walnuts a little at a time until the mixture is thick enough to be made into a burger.
Take handfuls of the mix and mold into the shape and size you want. The thicker they are, the longer it will take to cook.
Arrange on a baking tray and spray or brush with oil and bake at 200C for 35-40 minutes.
Serve on buns or mixed greens with the toppings and sauces of your choice.
