Black Bean Tacos with Avocado Coriander-Lime Sauce


These tacos make a great lunch or dinner, and would be the perfect food for a night in with friends. 

  • 2 cans black beans
  • 1 cup salsa
  • 1 tsp cumin
  • Tortillas (try our tortilla recipe here)
  • 1/2 ripe avocado
  • 3/4 cup coriander (or less)
  • 1 lime, juice
  • 1 clove garlic
  • 1 tbsp olive oil
  • 1 tsp agave nectar or olive oil
  • 1/8 tsp salt

In a blender add the avocado, coriander, lime juice, olive oil, garlic, agave and salt.

Blend until smooth, you can add a little water if you prefer the sauce to be a bit thinner.

In a saucepan on a medium heat, add the black beans, salsa and cumin.

Heat four about 5 minutes until cooked through.

Mash up some of the beans with the spoon for a creamier consistency.

Prepare any toppings you want to add, I like to use some lettuce, tomatoes and avocado.

Warm the tortillas in the microwave or a pan for a few seconds.

Build your tacos and enjoy.
