Chocolate and Courgette Muffins

These muffins make a great snack, and are just as good warmed up and served with fresh berries as a dessert.
- 1/3 cup honey
- 1/4 molasses
- 1/4 cup melted coconut oil
- 1 whole egg and 2 egg yolks
- 1 banana
- 3/4 cup plain yoghurt
- 1 tsp vanilla extract
- 2 medium courgettes grated
- 2 cups whole wheat flour
- 1/4 cup ground flaxseeds
- 1/2 cup cacao powder
- 1/2 tsp salt
- 2 tsp baking soda
- 1 tsp cinnamon
- 3 tbsp chocolate chips
Preheat the oven to 180C/350F/gas4 and line a muffin tin.
Grate the courgette and squeeze out as much moisture as possible.
In a mixer or using an electric whisk, mix together the wet ingredients and the courgette.
Sift together the dry ingredients and gradually add it to the wet ingredients.
Fold in the chocolate chips.
Using a tablespoon, spoon the mixture into muffin tin.
Bake for 20-25 minutes until a knife or skewer comes out clean.
