Chocolate Banana Bran Muffins

These muffins make a great snack and would also be great as a breakfast on the go, and would also be perfect for school lunch boxes.
  • 1 1/2 cups oat bran
  • 1/3 cup almond milk
  • 2 medium bananas, mashed
  • 1 1/2 tsp vanilla extract
  • 1 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 tbsp coconut oil, melted
  • 1/4 cup honey
  • 1/4 cup molasses
  • 3 tbsp chocolate chips/cacao nibs

Preheat the oven to 180C/350F/gas 4 and line a muffin tin.

In one bowl mix together the dry ingredients.

In a second bowl mix together the wet ingredients.

Make a well in the center of the dry ingredients and mix well.

Divide the mixture between the muffin cases and bake for 19-20 minutes or until they are springy to touch and a knife comes out clean.

Cool in the tray for 5 minutes before turning onto a cooling rack.
