Carob Peanut Butter Freezer Fudge
- 1/2 cup coconut oil
- 1/4 cup crunchy peanut butter
- 1/4 cup carob powder
- 1 tbsp cocoa powder
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 cup gluten free rice crisp cereal
Line a 4x8" loaf tin or with baking paper or cling film.
In a pan melt the coconut oil and peanut butter until smooth and all of the oil has melted.
Whisk in the other ingredients, apart from the rice cereal, until smooth.
Fold in the rice cereal until its fully coated.
Transfer the the tin, even out and either chill in the freezer of a couple of hours of the fridge overnight, then cut into pieces.
