Coconut Mulberry Brownies

These brownies are a much healthier but just as delicious alternative to normal brownies. They're the perfect food to treat a craving for something sugary. 

For the brownie base:

  • 1 1/2 cups pecans
  • 3/4 cup shredded coconut
  • 1 cup chopped pitted dates
  • 1/2 cup mulberries
  • 4 tbsp cacao powder
  • 1 tsp vanilla powder
  • 1 1/2 tsp water

For the chocolate frosting:

  • 3/4 cup soaked pitted dated (used 3/4 cup hot water to soak)
  • 1/4 cup melted coconut butter
  • 1/2 tsp vanilla extract
  • 2 tbsp cacao powder

For the coconut drizzle:

  • 1 tbsp melted coconut butter
  • 1 1/2 tbsp hot water
  • 1 drop liquid stevia
  • 1 1/2 tsp melted coconut oil

For the brownie base combine all the ingredients but the water in a blender and blend until they break down.

Add the water and blend again.

Transfer the mixture into a lined tin and press down.

For the frosting blend the dates with 1/2 cup of the soak water and the rest of the ingredients until smooth.

Spread the frosting over the brownie base and chill.

For the coconut drizzle, whisk all the ingredients together and drizzle over the brownies.
