Raw Rainbow Goji Salad

This brightly coloured salad is perfect for lunch, dinner or as a side salad. The goji berry dressing can be made in advance and stored in the fridge until it is needed. This dish is packed full of nutrients and antioxidants, and would make a great accompaniment to any meal.

Ingredients

  • 1 heaped cup red cabbage, shredded
  • 1 medium beetroot, grated
  • 2 carrots, grated
  • 1/2 cup sweetcorn
  • 1 spring onion
  • 3/4 cup goji berries
  • 4 tbsp apple cider vinegar
  • 1 tbsp fresh ginger, peeled and chopped
  • 1 1/2 tbsp white miso
  • 1 tbsp tahini
  • pinch salt and pepper

In a large bowl mix together the cabbage, beetroot, carrots, sweetcorn and spring onion.

Place the goji berries in a bowl and just cover with water and soak them for between 30 minutes to an hour.

Drain the goji keeping the water to use later.

Blend together the goji berries, apple cider vinegar, ginger, miso, tahini, salt and pepper, using as much of the water from earlier you need to get your desired consistency for the dressing.

Pour a generous amount over the salad and serve.
