Barely Grass White Chocolate Almond Butter Cups


These barley grass white chocolate cups are a delicious way of making a sweet treat a bit more healthy, so you don't have to feel as guilty when you get a craving so something sweet.


For the barley grass white chocolate

  • 2 tbsp coconut milk powder
  • 1 tbsp coconut sugar
  • 1 tsp vanilla extract
  • 50g cacao butter
  • 1 tbsp barley grass powder
For the almond butter filling
  • 2 tbsp almond butter
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 tbsp coconut sugar
  • pinch of salt

In a bowl melt the cacao butter with the coconut sugar, milk powder and vanilla extract.

Once it is melted remove from heat and mix in the barley grass powder to give an even colour.

Divide half of this mixture between 6 normal sized cupcake cases or 12 miniature ones and place in a fridge or freezer to set.

Combine all of the ingredients for the almond butter filling and melt to mix them properly.

Once all the almond butter ingredients have been combined divide them between the cupcake cases over the first later of white chocolate and return to the fridge or freezer to set.

Melt the remainder of the white chocolate and divide between the cases.

Allow to set and then enjoy.
