Lemon, Lucuma and Baobab Truffles
These truffles make a great sugar free sweet treat with all the additional nutritional benefits form lucuma, baobab and cacao. This recipe would be an easy way to use up any nut pulp you have it you have tried making your own nut milk, and stop you from wasting it.
Ingredients
- 1 cup raisins
- 1 1/2 cups almond pulp
- 1/3 cup raw cacao butter
- 3 tbsp Lucuma powder
- 3 tbsp Baobab powder
- 2 tbsp raw cacao powder
- 2 tbsp ground tiger nuts
- 1 lemon, juice and zest
- pinch of salt
- 1/2 tsp liquid stevia
- 1/2 tsp vanilla extract
To garnish
- 1 tbsp lemon zest
- 2 tbsp Lucuma powder
- 2 tbsp Baobab powder
Begin by soaking the raisins overnight.
Add the soaked raisins and the almond pulp to a food processor and blend for a few seconds.
Add all of the powdered ingredients and the lemon juice and process until combined.
Add the melted cacao butter and the remainder of the ingredients and process for roughly a minute. The dough formed should be smooth but not too firm.
Roll roughly 1 tbsp of the dough into balls.
Mix together the lucuma powder and baobab powders in a small bowl and use to coat the truffles, and garnish with lemon zest.
