Hemp Seed Tabouli


This hemp seed tabouli makes a great side dish for dinner or with some hummus and crackers would be a great, quick and easy lunch, especially because you can make a big bowl of it and use it up throughout the week.


  • 1 cup fresh parsley
  • 1/2 cup fresh mint leaves
  • 1/4 tsp salt
  • 4 medium vine tomatoes
  • 1 cup shelled hemp seeds
  • 2 tbsp hemp oil
  • 2 tbsp lemon juice

Blend together the parsley, mint and salt in a food processor

Chop the tomatoes into bite size pieces and add to a large mixing bowl with all of the other ingredients.

Mix well to fully coat the hemp seeds and serve.

This can be stored in the fridge for two to three days.
