Puffed Quinoa & Cacao Nib Chocolate Bars


These puffed quinoa and cacao bars are the perfect sweet treat but without all the sugar you would normally find in a chocolate bar, and because they're made with cacao not cocoa powder they're much more nutritious too.


  • 3/4 cup high quality cocoa butter
  • 1/4 cup coconut oil
  • 2 tbsp peppermint syrup
  • 1/4 tsp vanilla extract
  • 1/4 tsp peppermint extract
  • 1 cup cacao powder
  • 1/4 cup puffed quinoa
  • 1/4 cup cacao nibs

In a saucepan over a low-medium heat melt the coconut oil, cocoa butter and peppermint syrup.

Once melted remove from the heat and whisk in the vanilla and peppermint extract.

Add in the cacao powder and whisk in. Adjust the sweetness to your liking.

Stir in the puffed quinoa and cacao nibs.

Divide between 9 silicone molds, sprinkle over a little more puffed quinoa and cacao and refrigerate to set.
